THE DOWN LOW
Being on a gut cleanse where garlic, chilli, tomatoes, and most other "fire spices" have been kicked to the curb, I had to come up with creative and tasty ways to make wholesome and gut loving meals that would hit the spot! Being indian and not being able to consume certain spices can be tricky! But I've managed to find others that are not so harsh on the gut lining and deliver an immaculate taste that leaves your mouth watering for more!
This recipe is also great for people who are vegan, vegetarian or plant based, or simply just another healthy option to add to your current diet. Packed full of the goodness of pumpkin, it's also an amazing lunch, dinner or pre-post workout meal. Definitely one of my new favourites since slowly transitioning back into the gym for weight gain and strength conditioning. Keeps me feeling full, balanced and energetic without over burdening my digestive system. So let's get into it!
THE CONCOCTION
Sweet pumpkin curry is a healthy and delicious way to enjoy the feel and flavours of consuming a nutritious yet fulfilling meal. As mentioned, it can be served for lunch, dinner or even just as a meal throughout your busy day to keep your energy levels up and body feeling strong and ready to tackle the day!
The blend of traditional indian herbs and spices, coupled with mashed pumpkin and some salad or even roti bread is an ideal feel good kinda meal. Always focus on complete sources of plant based nutrition as this will keep you feeling healthy and fuller for longer.

INGREDIENTS
• 1 or half a Pumpkin
• Fresh Curry Leaves (a handful)
• Half a chopped onion
• Fresh Cilantro leaves (a handful) • 1/2 Crushed Cloves of Garlic (optional)
• Chilli Flakes or Fresh Chilli (optional)
• Turmeric (optional for taste/curry flavour)
• Pink Himalayan Salt (to taste)
• A pinch of Cumin Seeds
• A pinch of Fenugreek Seeds
• A pinch of Mustard Seeds
• Coconut oil for cooking
THE RECIPE
Step 1: Prepare the Pumpkin: Cut a full pumpkin in half and remove the seeds. Then cut in to quarter sections and peel the skin. Dice in to medium sized cubes and place into a bowl.
Step 2: Prepare Ingredients: Chop up 1 or half and onion and finely dice to blend in with the curry. Add 1 Tablespoon of Coconut oil to a clay/besma pot and set the stove to a medium temperature. Add the onions and sauté the them in the oil until the aroma is filling up the entire space!
Step 3: Cook up a storm: Once the onions are golden, add a pinch of Cumin seeds, Fenugreek seeds, Mustard seeds and a handful of curry leaves. Be sure to add less of the Fenugreek as it can have a bit of an over bearing taste. At this stage you can also add chilli or garlic and turmeric for extra healing benefits.
Step 4: Sautè your ingredients : Allow the herbs and onions to sizzle for a minute or two before adding the Pumpkin cubes into the pot. Sautè all of the ingredients together and cover the pot for 20-30 minutes ensuring that you check and stir occasionally to ensure it doesn't over cook.
Step 5: Mash it up: Once the consistency of the Pumpkin is soft and ready to be mashed, mash all the ingredients together and stir well. Add Cilantro on top to garnish and for taste and VAAALAAH! Your ready to serve!

There you have it, an easy, simple, delicious and gut friendly plant based meal. Definitely one of me favourite plant based meals to date! I particularly love having this curry along side a nice Supergreen salad and some pita or roti bread which can be substituted for gluten free or 50% wheat flour 50% veggies. Enjoy your meal!
