Plant Based Zucchini Pasta (Gut Healing Recipes)

THE DOWN LOW

It's safe to say that prior to my cleanse, Pasta was one of my all time favourite and "go to" dishes. I loved the high carb diet as it helped me gain the desired weight I wished to achieve and sustain myself through heavy workouts in the gym. However all those carbs, sugars, starches and process proteins eventually got the better of me.

Until a few months ago, I was completely beside myself, worried about what I would be able to eat, or more accurately "not eat". It seemed like with my candida, parasites and leaky gut there would be no light at the end of the tunnel. I was afraid that eventually all I'd be able to consume was air and water! Yes, being in ill health can have you thinking all sorts of crazy thoughts!

But it wasn't until I started to do some research and experiment with food myself that I realised how much variety I could add into my diet, which will ultimately also give me the balance my body so desperately needs among all the processed junk! It has taught me new found recipes, tips and tricks to cook a variety of delicious plant-based and sugar free meals that I am now sharing with you all! I'm super excited for this one because it not only looks great, but taste's absolutely delish!

THE CONCOCTION

Zucchini Pasta, better known as "Zoodles" are a healthy, nutritious way to enjoy the feel and flavours of consuming a nutritious yet fulfilling meal. They can be served for lunch, dinner and even breakfast or even broken down into smaller portions as a snack throughout the day. To be quite honest I've tried them at all different times of the day and have not been disappointed!

Although you can eat these completely RAW, I prefer to sauté mine in some herbs and spices to add a little extra bite and make it easier on my digestive system to break down the ingredients! The blend of indian herbs and spices, coupled with a thick and creamy avocado sauce is exactly what the mind, body and soul are craving! So now that I've got your taste buds rolling, let's get down to business!

INGREDIENTS

• 1 Zucchini (one full serving)

• 1 Avocado

• Half a chopped onion

• Fresh Cilantro leaves (a handful)

• Pepitas (Pumpkin Seeds) • 1 Garlic (optional)

• Chilli Flakes or Fresh Chilli (optional)

• Half a Lemon (Juice)

• Pink Himalayan Salt

• A pinch of Cumin Seeds

• A pinch of Fenugreek Seeds

• A pinch of Mustard Seeds

• Coconut oil for cooking

• Olive oil for creamy sauce (optional)

THE RECIPE

Step 1: Prepare the pasta: Firstly grab a reliable peeler or a spiralizer (for noodle effect) and peel the Zucchini in straight lines that look like pasta. Peel right down to the core and eat or dispose of the core. Place the strips of Zucchini into a bowl and set aside.

Step 2: Prepare the sauce: Mash or blend one full avocado with Cilantro leaves, half a tea spoon of Pink Himalayan Salt, a teaspoon of Pepitas, the juice of half a Lemon and a pinch of mixed herbs to taste. Feel free to add a clove of Garlic and/or chilli to the mix, I left them out as they cause irritation to my gut at the moment so I have to be careful with hot/spicy foods. You can also add 1 tablespoon of Olive Oil to the mix to make it more runny and creamy. I also left this stage out as I prefer my avocado to have a more dip/guacamole type feel.

Step 3: Cook up a storm: Add one tablespoon of coconut oil to a non-stick pan and set the stove to a low/medium temperature. Chop up half an onion and add to the pan along with a pinch of Cumin seeds, Fenugreek seeds and Mustard seeds. Be sure to add less of the Fenugreek as it can have a bit of an over bearing taste. At this stage you can also add chilli or garlic

Step 4: Sautè your ingredients : Allow the herbs and onions to sizzle for a minute or two before adding the Zucchini pasta strips into the pan. Sautè all of the ingredients together for 2-8 minutes depending on how you enjoy the texture, I usually cook it for about 5 minutes. As you do this, bask in the beautiful aroma of health and flavour mixed into one delicious concoction! I can assure you at this stage you will be tempted to start eating from the pan, but hold off just a few moments!

Step 5: Once your pasta is ready, place it into a heat safe bowl, add in the creamy avocado sauce, mix it all together thoroughly and BOOM! There you have it, a quick, easy, healthy and delicious plant based meal or snack that your gut will thank you for! As I mentioned earlier you can also have this recipe raw, in which case I would add the onions and herbs/spices into the avocado sauce and blend it all together.

There you have it, an easy, simple, delicious and gut friendly plant based meal. Definitely one of me favourite plant based meals to date! If you wish to make more servings, simply add 1 Zucchini per extra serve. Enjoy!
